- 1 cup non-dairy milk, plus more as needed (I like unsweetened almond milk)
- 1/2 teaspoon vanilla extract
- 1 tablespoon unsweetened cocoa powder (or cacao powder)
- 1–2 medjool dates, pits removed (Note 1)
- 1 tablespoon cashews (Note 2)
- 1/2 cup frozen cherries (I like dark sweet cherries)
- 1/2 cup frozen strawberries
Optional Mix-Ins
- 1 big handful of baby spinach
- 1 scoop protein powder (I like vanilla or chocolate)
Instructions
- Add all ingredients to a high-speed blender in this order: milk, vanilla extract, cocoa powder, medjool date, cashews, optional mix-ins, frozen cherries, and frozen strawberries.
- Blend until creamy and smooth, adding more milk as needed.
- Serve immediately and enjoy. Tastes best when fresh.
Notes
- Dates – If you’re not using a high-powered blender, soak the date in hot water for 10-20 minutes to soften it. If you don’t have dates, you can substitute with 1 tablespoon of maple syrup or honey.
- Cashews – If you’re not using a high-powered blender, soak the cashews in hot water for 10-20 minutes to soften it. If you don’t have cashews, you can substitute with 1 tablespoon of ground flaxseeds, chia seeds, or hemp seeds.
