What Makes These Cranberry Orange Muffins Healthy?

healthy orange cranberry muffins

These cranberry orange muffins are a healthy take on the classic bakery-style muffins without sacrificing that delicious citrus flavor or tender texture.

Just a few simple, pantry-friendly ingredients are all you need to make these wholesome muffins that are perfect for breakfast or snack time.

These cranberry orange muffins are made with whole wheat flour, Greek yogurt, fresh oranges, fresh cranberries, and less added sugar. They’re naturally sweetened with pure maple syrup. You can choose to add the optional muffin streusel topping and glaze if desired.

Healthy Cranberry Orange Muffin Ingredients

Whole wheat flour:  I use 100% whole wheat flour. It adds a delicious hearty flavor and wholesome texture to these muffins.

Baking powder and baking soda: These are leavening agents that help the muffins rise, which makes them light and fluffy. It’s important to make sure your baking powder and baking soda are fresh to ensure a proper rise.

Salt: This helps balance the sweetness and enhances the flavor of the other ingredients.

Ground cinnamon: This adds a warm and cozy flavor that balances with the fresh orange juice and tart cranberries.

Eggs: I use two eggs for this recipe which help make the muffins moist and binds the ingredients together.

Greek yogurt or sour cream: This helps keep the muffins moist and adds a boost of protein. I usually use 0% plain yogurt. You can use sour cream if you prefer.

Butter or coconut oil: You can use melted coconut oil or unsalted butter for this recipe. I usually use butter because it gives it better flavor.

Fresh orange juice and zest: Adding freshly squeezed orange juice to the muffins can help tone down the tannic or bitter taste of the whole wheat flour. The fresh orange zest adds a nice bright flavor to this recipe.

Pure maple syrup: This helps to naturally sweeten the muffins without adding refined sugar.

Vanilla extract: This gives the muffins good flavor.

Fresh or frozen cranberries: I recommend using fresh or frozen cranberries for this recipe. If using frozen, do not thaw.

I like to chop the cranberries into smaller pieces before adding them to the batter, which helps distribute them more evenly.

Streusel topping: This is optional and contains a little brown sugar, but it gives these healthy muffins that classic bakery-style touch.

Glaze: This adds an extra layer of flavor for the holidays.

How to Make Healthy Cranberry Orange Muffins

Preheat the oven to 425°F. Lightly grease a 12-cup standard muffin tin with butter or nonstick spray.

In a medium bowl, whisk the flour, baking powder, baking soda, salt, and ground cinnamon together.

In a large bowl, whisk the eggs, Greek yogurt (or sour cream if using), fresh orange juice, pure maple syrup, melted butter (or coconut oil if using), fresh orange zest, and vanilla extract until well combined.

Pour the dry ingredients into the bowl with the wet ingredients and stir just until combined. DO NOT OVERMIX.

Use a spatula to gently fold in the fresh or frozen cranberries.

Scoop the batter into the prepared muffin tin, filling them all the way to the top.

Make the streusel topping (optional step): In a small bowl, whisk the flour, rolled oats, chopped pecans, ground cinnamon, brown sugar, a pinch of salt together.

Add the melted butter and use a fork to combine the ingredients just until moistened and crumbly.

Sprinkle the streusel topping over the top of the muffins. If you’re not using the streusel topping, you can sprinkle the top of the muffins evenly with coarse sugar if desired.

Bake for 5 minutes at 425°F, then reduce the temperature to 350°F (without opening the oven door). Bake for an additional 13-15 minutes, or until a toothpick inserted into the center comes out clean.

These muffins should take about 18-20 minutes in total to bake. Let them cool for 5 minutes in the pan, then transfer to a wire rack to finish cooling before icing.

Make the glaze (optional step): In a small bowl, whisk the powdered sugar, vanilla extract, 1 tablespoon of the orange juice (or milk if using), and a pinch of salt.

If the glaze is too thick, add an extra tablespoon of orange juice or milk until it’s a consistency that’s easy to drizzle over the muffins.

Fresh vs. Frozen Cranberries: Which Should You Use?

Fresh or frozen cranberries work great in these muffins. If using fresh cranberries, rinse them in a colander under cool water and gently pay them dry.

Fresh cranberries are firm and easy to chop. If you’re using frozen cranberries, add them to the batter straight from the freezer, don’t thaw them first.

If the berries are large, you can roughly chop them while they’re frozen, or add them whole to the batter.

Can I Use Dried Cranberries Instead?

Yes, you can use dried cranberries, but they have a different flavor and texture. Fresh cranberries release moisture as they bake into the muffins, so you’ll want to use ¾ cup dried cranberries instead.

If you’re using dried cranberries, consider soaking them in hot water or warm orange juice for 10 to 15 minutes to help plump them up. Drain the liquid just before adding them to the batter.

How to Store Cranberry Orange Muffins

Leftover cranberry orange muffins can be stored in an airtight container for up to 3 days at room temperature.

Fridge: For longer storage, place them in an airtight container in the fridge for up to 5 to 7 days. Tastes best after warming them up for 10-15 seconds in the microwave.

Can I Freeze Cranberry Orange Muffins?

Yes! Allow them to cool completely, then wrap each muffin individually in plastic wrap and place them in a freezer-safe bag or container. Freeze for up to 3 months. Thaw overnight in the fridge or at room temperature.
