Description

These Carrot Cake Overnight Oats have all the cozy flavors of carrot cake, with freshly grated carrots, warm cinnamon, ginger, nutmeg, raisins, vanilla, and a touch of maple syrup. All tucked into a creamy jar of rolled oats and protein-packed Greek yogurt. They’re perfect for meal prepping for busy mornings or you simply want to make a breakfast that feels a little more special.

Ingredients

Units Scale
  • 1/2 cup milk of choice (I use vanilla almond milk)
  • 1/4 cup plain Greek yogurt
  • 1/4 cup finely grated carrot
  • 1/2 teaspoon vanilla extract
  • 1-2 tablespoons pure maple syrup (or honey)
  • 1/4 teaspoon fresh orange zest (optional)
  • 1/2 cup rolled oats, gluten-free if desired
  • 2-3 teaspoons chia seeds
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg (or allspice)
  • 1/8 tsp ground ginger
  • A pinch of salt
  • 1-2 tablespoons raisins (or chopped dates)
  • 1 tablespoon chopped pecans (or walnuts)

Optional toppings:

  • White chocolate chips
  • Shredded coconut
  • Whipped cream cheese
  • Whipped cream

Instructions

  1. Combine the ingredients. In a medium bowl, combine the milk, Greek yogurt, grated carrots, vanilla extract, pure maple syrup (or honey if using), and fresh orange zest (if using).
  2. Add the dry ingredients. Stir in the rolled oats, chia seeds, ground cinnamon, ground ginger, ground nutmeg (or allspice if using), a pinch of salt, and raisins.
  3. Refrigerate overnight. Pour the mixture into a glass jar or airtight container with a lid. Place in the fridge for 8 hours or overnight.
  4. Add your favorite toppings and enjoy! In the morning, give it a good stir and add chopped pecans or walnuts, along with your favorite toppings.
