Description
This cilantro lime dressing is the perfect vinaigrette for your next salad, burrito bowl, slaw, tacos, fajitas, or as a marinade for your favorite protein. It’s made with fresh cilantro, zesty lime juice, spicy jalapeno, garlic, ground cumin, and maple syrup for natural sweetness.

- 1/3 cup extra virgin olive oil
- 1/3 cup packed fresh cilantro leaves (some small stems are okay)
- 1/4 cup freshly squeezed lime juice
- 1 tablespoon maple syrup (honey or agave nectar works too)
- 1 jalapeño pepper, seeded
- 1 small garlic clove, peeled
- 1/4 teaspoon ground cumin
- 1/4 teaspoon fine sea salt
- Freshly ground black pepper, to taste
Instructions
- In a food process or blender, add the cilantro, lime juice, maple syrup, jalapeño pepper, garlic, ground cumin, salt, and a few grinds of freshly ground black pepper. With the motor running, drizzle in the olive oil and process until smooth.
- Use immediately or store in the fridge in an airtight contained for up to 4 to 5 days.
Notes
- Make it creamy: Add 2 to 3 tablespoons of mayonnaise or plain Greek yogurt along with the other dressing ingredients and process until smooth.
- Keep it vegan by using pure maple syrup.
- Leave out the jalapeño pepper if you’re sensitive to heat.
