Description

This fresh peach salsa recipe is a delicious sweet and spicy condiment made with ripe peaches, Roma tomatoes, crunchy red bell pepper, jalapeño pepper, crisp red onion, cilantro, and zesty lime juice. Enjoy it as a dip with tortilla chips or as a topping for tacos, grilled meats, and more.


Ingredients

  • 3 medium ripe peaches, pitted and chopped small
  • 2 medium Roma tomatoes, seeded and finely chopped
  • 1/2 medium red bell pepper, seeded and finely chopped
  • 1 jalapeño pepper, seeded and finely chopped
  • 3 tablespoons finely chopped red onion
  • 3 tablespoons finely chopped cilantro
  • 1-2 tablespoons fresh lime juice, to taste
  • Salt, to taste (I use 1/2 teaspoon of fine sea salt)
  • Chili powder or Tajin, to taste (I use 1/4 teaspoon chili powder)

Instructions

  1. In a large bowl, combine the peaches, tomatoes, red bell pepper, jalapeño pepper, red onion, cilantro, and fresh lime juice. Season to taste with salt and chili powder (or Tajin if using). I normally use ½ teaspoon of fine sea salt and ¼ teaspoon of chili powder for the best flavor. A little chili powder or Tajin goes a long way. Start with 1/8 teaspoon if you’re not sure, then as more if desired.
  2. Serve at room temperature or chilled. For the best flavor, allow the salsa to rest at room temperature for 10 to 15 minutes, which helps the flavors mingle together. If you enjoy a chilled salsa, cover and refrigerate for up to 1 hour before serving.

Notes

  • Make sure everything is uniformly diced. I like to finely chop all the ingredients to the same size so every bite will have a little bit of everything.
  • Adjust the heat level. For a mild salsa, remove the seeds and white ribs from the jalapeño pepper before dicing. If you prefer a spicier salsa, leave them in or use a habanero instead.
  • Tastes best when fresh. While this salsa can last up to 2 days covered in an airtight container in the fridge, it tastes best on the day it’s made.
  • Tomato substitute: You can use 1 – 1¼ cups of finely diced ripe mango, pineapple, or strawberries.
