These Pumpkin Overnight Oats are a healthy and creamy make-ahead breakfast. They are perfectly spiced and lightly sweetened with pure maple syrup. Made with wholesome ingredients like rolled oats, chia seeds, pumpkin puree, and protein-packed Greek yogurt, you’ll want to make these overnight oats all season long!
Ingredients
- 1/2 cup milk of choice
- 1/4 cup plain Greek yogurt
- 1/4 cup pumpkin puree
- 1 tablespoon pure maple syrup, or more to taste
- 1/4 teaspoon vanilla extract
- 1/2 cup rolled oats, gluten-free if desired
- 1-3 teaspoons chia seeds
- 1/4 - 1/2 teaspoon instant espresso powder (optional)
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground ginger
- 1/8 teaspoon ground nutmeg
- A pinch of salt
Instructions
- Mix the wet ingredients. In a medium bowl combine the milk, Greek yogurt, pumpkin puree, vanilla extract, and maple syrup.
- Add the dry ingredients. Stir in the oats, chia seeds, instant espresso powder (if using), ground cinnamon, ground ginger, ground nutmeg, and a pinch of salt. Taste and add more maple syrup if you want it sweeter. Add ¼ teaspoon more ground cinnamon if you want it a stronger pumpkin spice flavor.
- Pour the mixture into a glass jar or airtight container with a lid. Place in the fridge for 8 hours or overnight. In the morning, give it a good stir and add your favorite toppings before enjoying.

Can I Use Quick Oats Instead of Rolled Oats? Yes, you can use quick oats if that’s what you have on hand. They will break down into a pudding-like consistency after sitting in the fridge.
Can You Make Overnight Oats Ahead of Time? Yes, overnight oats are perfect for meal prep. For the best taste and texture, make them 1-3 days in advance instead of a whole week’s worth. I personally think they taste best within the first 48 hours.
Chia seeds: I usually use 2 teaspoons of chia seeds when making these overnight oats. Chia seeds soak up excess liquid to create a thick and creamy consistency.
Ground cinnamon: I use ¼ teaspoon ground cinnamon for the perfect pumpkin spice flavor. I find that ½ teaspoon can give the oats a gritty texture. But if you like it spicy, add up to ½ teaspoon of ground cinnamon.
Instant espresso powder: If you want to make this like a pumpkin spice latte, add a little instant espresso powder to your overnight oats. I use Nescafé Gold Espresso powder. Use ¼ teaspoon for a hint of coffee flavor or ½ teaspoon if you prefer a stronger coffee flavor.
