Description

This easy French Toast recipe is quick to make with thick-cut bread, eggs, milk, ground cinnamon, and a touch of nutmeg. Serve it with maple syrup for a delicious weekend brunch.


Ingredients

  • 4 large eggs
  • 1/2 cup milk (I recommend 2% or whole milk)
  • 1 to 2 tablespoons granulated sugar (depending on how sweet you like it)
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon fresh orange zest (optional)
  • 8 slices of brioche, challah bread, or French loaf (3/4-inch or 1-inch thick slices)
  • 1 tablespoon butter, ghee, or cooking oil for the pan, plus more for serving

Optional Toppings:

  • Maple syrup
  • Warm berry compote
  • Powdered sugar
  • Fresh fruit or berries
  • Chocolate hazelnut spread
  • Whipped cream
  • Lemon curd

Instructions

  1. Make the batter. In a wide shallow dish, whisk together the eggs, milk, sugar, cinnamon, nutmeg, vanilla extract, and orange zest if using until thoroughly combined. If you prefer, you can add all of the batter ingredients to a blender and blend until smooth.
  2. Heat up the griddle or skillet. In a large skillet or electric griddle, melt the butter over medium heat. For an electric griddle, preheat the temperature to 350°F.
  3. Dip the bread in the batter. Dip each side of the bread into the batter, about 5 to 10 seconds max per side. Let the excess batter drip off, then immediately transfer the soaked bread slice onto the hot skillet or griddle. I recommend only dipping the amount of bread that you will cook at one time. This means if your skillet or griddle can only accommodate two pieces of bread at a time, then only dip two pieces of bread.
  4. Cook the French toast. Cook for 2 to 3 minutes on each side until golden brown. Serve hot with your choice of toppings. I like butter, pure maple syrup, and fresh berries.

Notes

  • I recommend using day-old bread because it’ll absorb the vanilla-cinnamon custard better than using fresh bread.
  • Don’t press down. Avoid using your spatula to press down on the French toast while it’s cooking. Pressing down will make it tough and lose its fluffy and light texture.
  • Make it without sugar: The granulated sugar will help the bread get a crisp and golden exterior as it carmelizes when cooked on the griddle. I’ve made this French toast without sugar and it still tastes great! You can omit the sugar in this recipe if you prefer. 
  • Make it dairy free: Use your favorite dairy-free milk, such as oat milk or soy milk. You can use a thinner milk, such as almond milk, but it won’t be as rich.
