French toast is one of my favorite things to make for a sweet breakfast treat. I’ve been making this recipe for over 10 years and it never fails.

Sliced bread soaked in a yummy mixture of beaten eggs, milk, vanilla extract, and warm spices, then cooked in butter on a griddle until it’s golden brown on the outside and fluffy on the inside.

This is what breakfast dreams are made of… according to my husband!

Below is everything you need to make the most incredible French toast.

Bread: I use brioche bread for this recipe. I recommend using brioche, challah, French loaf, or Texas toast.

Eggs and milk: This creates the custard batter for this recipe. I recommend using 2% or whole milk because the fat will help create a thicker and flavorful batter. You can use dairy free milk if you wish.

Sugar: The sugar helps to give the French toast a crisp and golden exterior since it caramelizes when it cooks on the hot griddle. It also helps balance the eggy custard and richness of the batter.

Cinnamon and nutmeg: These warm spices enhance the flavor of the French toast.

Vanilla extract: This gives the French toast good flavor.

Orange zest: A little bit of fresh orange zest pairs perfectly with the warm cinnamon spice.

Butter, ghee, or cooking oil: I like using ghee because it has a higher smoke point than butter.

If you use butter, make sure to wipe the griddle or skillet clean after making each batch of French toast to prevent the butter from burning.

How to make the best French toast

Make the batter. In a wide shallow dish, whisk together the eggs, milk, sugar, cinnamon, nutmeg, vanilla extract, and orange zest if using until thoroughly combined.

You can also add all the batter ingredients to a blender and blend until combined.

Heat up the griddle or skillet. In a large skillet or electric griddle, melt the butter over medium heat. For an electric griddle, preheat the temperature to 350°F.

Dip the bread in the batter. Dip each side of the bread into the batter, about 5 to 10 seconds max per side. Let the excess batter drip off, then immediately transfer the soaked bread slice onto the hot skillet or griddle.

I recommend only dipping the amount of bread that you will cook at one time. This means if your skillet or griddle can only accommodate two pieces of bread at a time, then only dip two pieces of bread.

Cook the French toast. Cook for 2 to 3 minutes on each side until golden brown. Serve hot with your choice of toppings. I like butter, pure maple syrup, and fresh berries.

The Trick to Making the Perfect French Toast

Use the right bread. My favorite type of bread to use for French toast is brioche because it’s naturally eggy and buttery. This means once it’s cooked, it gets a crisp exterior and sweet, custardy center.

Other great bread choices include challah bread, French loaf, or Texas toast. I recommend using day-old bread because it’ll absorb the vanilla-cinnamon custard better than using fresh bread.

Use thick-cut bread. Once you have selected the right bread, it’s important to make sure to slice it about 3/4″ to 1″ thick. This will improve the texture because thick slices of bread absorb the creamy custard without falling apart.

Balance the ratio of eggs to milk. After experimenting with different ratios, the best ratio is 2 eggs to ¼ cup of milk. I like using whole milk or 2% milk. You can use dairy free milk if you wish.

It’s important to make sure the egg and milk mixture is thoroughly combined. You don’t want streaks of egg white on your French toast while it’s cooking.

Soak the bread for the right amount of time. I like to dip the bread into the egg-milk mixture for 5-10 seconds max on each side. If you soak the bread for too long, it can make your French toast soggy or fall apart.

Don’t press down. Avoid using your spatula to press down on the French toast while it’s cooking. Pressing down will make it tough and lose its fluffy and light texture.
