Description

This Rainbow Fruit Platter is a healthy and fun way to eat more fruits. I’ve paired it with a delicious no-bake cheesecake fruit dip, which is easy and quick to make. This is the perfect fruit board to serve at your next St. Patrick’s Day party, birthday party, or next holiday gathering!

Instructions

  1. Select a large round board to display the fruit. Start with the red fruits by forming them on the outer edge of the rainbow arch.
  2. Then arrange the orange fruits in a row just below the red fruits.
  3. Then arrange the yellow fruits in a line below the orange fruits.
  4. Then arrange the green fruits in a row underneath the yellow fruits.
  5. Then arrange the blue fruits below the green fruits.
  6. Then arrange the purple fruits in a curve below the blue fruits. Each row will curve according to the rainbow arch shape and become smaller to mimic the rainbow colors.
  7. At the base of each side of the rainbow, you can add your clouds. This can be a cheesecake yogurt dip, Babybel cheese, mini marshmallows, or little meringues. If you’re doing a St. Patrick’s Day theme, you can add gold foiled candy, such as gold chocolate coins to mimic a pot of gold.

Notes

  1. If you’re using a rectangular board, add the cloud options on the two opposite corners of the board. Then start by arranging the yellow fruits in a row in the middle, connecting the two clouds together (as shown in the above photos).
  2. Make-ahead instructions: Because fruit starts to release moisture and soften after cutting it up, I recommend preparing this no more than 24 hours in advance. Keep the fruit stored in the fridge in separate airtight containers to prevent the flavors and colors from mingling.
  3. It is significantly cheaper to make your own fruit tray than buying a pre-made one. To keep the costs low, choose the most affordable fruits to represent each rainbow color, buy fruits that are in season, and buy fruits that are on sale.
